I get asked about this recipe all the time, so I figured I need to put it in a place you guys can come back to over and over. And I don’t blame people for asking about it because it is soooo dang good! I’m not a fantastic cook but this is a meal that never disappoints! Everyone loves it, kids and adults alike. For speed you can make this recipe with a rotisserie chicken but it really is better with the cubed chicken.
Now on with the show, here are the ingredients:
- 3/4 chicken breasts
- 1/2 onion
- 1 1/2 teaspoon garlic powder
- 1 tbsp olive oil
- 4 cans (15 1/2 oz) great northern beans – drained
- 1 can chicken broth
- 1 can chopped green chilis
- 1 teas salt
- 1 teas ground cumin
- 1 teas dried oregano
- 1/2 teas pepper
- 1/4 teas cayenne pepper
- 1 cup sour cream
- 1/2 cup whipping cream
Cut the Chicken in to bite sizes cubes and saute it with the onions, garlic and oil. When I don’t have fresh onion, I use minced. Add beans, chicken broth, green chilis and seasoning. Bring to a boil then reduce heat and simmer for 30 mins. After 30 minutes, remove from heat and stir in sour cream and whipping cream till dissolved. If you are sensitive to heat leave out the cayenne pepper and add an extra scoop of sour cream to your bowl. That being said, this recipe isn’t hot, all our kids eat it just fine but I wanted to be sure to through the option out there! We serve it with rolls. This recipe feeds our family of 7 and we eat every drop so if you are serving a crowd be sure to double it as everyone always wants seconds.
